Original handmade Japanese high quality chef’s kitchen knife (Tiger)

A original beautifully handmade Japanese high quality chef’s kitchen knife Bunka is a general purpose kitchen knife like Santoku and it used to be just as popular as the Santoku but has become less common in recent years. With its wider blade, the Bunka knife is suitable for cutting vegetables, while the triangular point area is especially useful when cutting fish and meat. DESCRIPTION Aogami No.2 (Hitachi Metals Ltd.) is made by adding chromium and tungsten/tungsten to Shirogami No.2. This results in increased toughness and the production of carbide molecules that improve edge retention. Many knife users have commented that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.
