A original beautifully handmade Japanese high quality chef’s kitchen knife Bunka is a general purpose kitchen knife like Santoku and it used to be just as popular as the Santoku but has become less common in recent years. With its wider blade, the Bunka knife is suitable for cutting vegetables, while the triangular point area is especially useful when cutting fish and meat. DESCRIPTION Aogami No.2 (Hitachi Metals Ltd.) is made by adding chromium and tungsten/tungsten to Shirogami No.2. This results in increased toughness and the production of carbide molecules that improve edge retention. Many knife users have commented that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention. The traditional style of Japanese wood carving has a long history of simplicity and inspiration. Although this technique (Chokin) is gradually disappearing in history, we hope to do our best to make more people feel its beauty. This is a limited edition of our kitchen knives in collaboration with the woodcarver Asamura Takao, whose 50+ years of carving skills make each piece look so spiritual. Each design is polished for months, even a year or more. Kurouchi Finish, the unprocessed (black) part on the top of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look. The rim is the carbon steel researched good carbon steel, forged and clad stainless. Since the side is made of stainless steel, it is difficult to rust and hygienic.
